ONLY YOU PRIVILEGE club members might expect to enjoy our online Cheese & Wine event, pairing wonderful artisan cheese with exceptional wines – all overseen by DS ambassador Jonathan Broomfield.
Over the last two years ONLY YOU PRIVILEGE members have had the exclusive opportunity to attend online cheese and wine tasting evenings hosted by Jonathan. Prior to the event, guests have received both the wine and cheese by post before joining a select group of fellow ONLY YOU PRIVILEGE members online, where Jonathan has used his knowledge and passion to guide them through the cheese and wine choices he has made providing a fascinating insight into the skill and craftsmanship of artisan producers.
To give you a taste of our Cheese & Wine event, Jonathan has prepared a bespoke pairing of 2 cheeses and wines for our summer festivals.
The cheese and wines selected can all be purchased at major supermarkets and, and using the tasting notes below, you can get a flavour of an ONLY YOU PRIVILEGE event in your own home.
A traditional Brie made using artisanal handmade techniques in the heart of Brie, France. Located only a short distance from the arts & culture of Paris, Brie de Meaux is one of the most recognisable French cheeses. We recommend leaving this out for one hour to develop its fullest flavour, and for a unique pairing, enjoy alongside a chilled flute of Moët & Chandon Champagne Brut Impérial NV.
“The bubbles from the Champagne aerate the fats inside the cheese to intensify the richness for a heightened tasting experience. Champagne works beautifully with select cheeses as it changes the dynamics of the tasting, and blends with the cheese to create an indulgence not found with other pairings. I hope you enjoy this pairing in your own home, and you too find the dynamics of cheese & Champagne wonderful.”
Aroma: Delicately light & milky with a subtle earthiness & ‘biscuit’ note.
Texture: Slight firmness to the rind but soft paste to the bite. Breaks down into an unctuous, buttery & smooth paste when eating.
Taste: Delicate nut & mushroom notes with the overriding flavour of milkiness. In some examples you can find a hint of fruit depending on the season it was made. When young it is mellow & creamy but when ripe it becomes punchier with a distinct earthiness.

The cheese & Champagne is available from Marks & Spencer, Waitrose, Sainsburys & Tesco
A hard cheese made in the Jura region of Eastern France where it borders with Switzerland. The terroir of the region has the perfect combination of factors from soil, grass, climate etc. to impart fruity & floral notes into the milk. It is suggested that Comte has been produced since the 12th Century and is the highest produced cheese in France. Made in the Summer months when the cows are allowed to roam the mountains (in Winter when the cows return, they make the seasonal Vacherin Mont D’or). It is available in varying maturities but the perfect introduction to this cheese is matured for around 10-12 months (Usually strength 4 or 5). This maturity has a creamy, nutty & fruity flavour with a hint of toffee-like sweetness.
We recommend pairing this with a Pinot Noir like the Bourgogne Pinot Noir Cave de Lugny from Waitrose or a red Bordeaux blend such as the M&S Bordeaux Rouge from Marks & Spencer. Both wines are medium-bodied and have aromatic dark fruit notes from blackcurrants to cherries.
“The creamy & toffee-like sweetness of Comte with the flavour profile of a medium-bodied French red adds depth & intrigue to the tasting. Comte has a wide spectrum of flavour profiles but a red wine can work alongside this so you can appreciate both the cheese & wine, without losing the flavours from either. Comte is truly delicious and can be savoured either on its own or alongside a glass of wine.”

Texture: Semi-hard to the bite, smooth texture with occasional lactate crystals. It breaks down quickly into a smooth, mouth filling cheese.
Taste: It starts with an initial burnt sweet nuttiness which is followed by a fruity tang. The cheese ends with a mellow & subtle grass note and a milky richness.
